You know, it never occured to me that baking pre-cooked pasta on a pizza might dry it out… then again, I don’t generally think of most pizza toppings as being dried out by the baking process though they do tend to dry out a bit in the fridge(I’m the kind of person that, when I order pizza, I deliberately order enough to both get a hot supper when I order and a cold lunch the next day and cold pizza is one of the few leftovers I actually enjoy)… Though, it does raise the question, does pizza really lose moisture in the fridge or does hot versus cold and melted versus solid cheese affect the percieved level of moisture?
